Prawn Balls

Serves : 2 person
Preparation Time : 10 minutes
Cooking Time : 5 minutes

300 g (10 oz) raw tiger prawns, shelled
2 spring onions, roughly chopped
grated rind of 1/2 lime
1 tablespoon chopped fresh coriander
1 teaspoon fish sauce (nam pla)
1 tablespoon cornflour
groundnut oil for frying

Put the prawns, spring onions, lime rind, coriander and fish sauce in a food processor or blender and process for about 20 seconds until well combined but retaining a little texture.

Shape the mixture into 12 balls and lightly dust them in cornflour. Heat a little oil in nonstick frying pan and fry the balls for 2-3 minutes until golden all over. Drain on kitchen paper.
