Grilled Lemon Sole Fish with Skordalia

Serves : 4 person
Preparation time : 10 minutes
Cooking time : 25 - 30 minutes

700g potatoes, peeled and chopped
125 cream cheese
1/4 cup lemon juice
1/4 cup olive oil
2 cloves garlic, crushed
1 cup fresh breadcrumbs
salt and white pepper, to taste

4 lemon sole steaks
olive oil to spray

chargrilled/steam vegetables, to serve

1. Steam or boil the potatoes until tender. Drain well and mash with cream cheese, lemon juice, oil and garlic until smooth. Stir through the breadcrumbs and seasonings. Cover and keep warm.

2. Spray the fish with oil and season. Chargrill for 3-4 minutes on each side or until just cooked. Place the lemon sole fish on servings plates and serves with the skordalia and chargrilled/steam vegetables. Serve immediately.
