Ingredients :
1 snapper or sea bass, about 500g
2 tsp thai fish sauce

1/2 corn flour
a handful chopped coriander leaves

1 spring onion, sliced


Finely Sliced :

1 torch ginger bud

1 stalk lemon grass

5 red chillies
2 kaffir lime leaves

1 cm knob young ginger, peeled

2 cloves garlic, peeled

1 spring coriander leaves
1 spring onion


Seasoning :

salt to taste

1 1/2 tbsp sugar
3 - 3 1/2 kalamansi juice

1/2 tsp anchovy stock granules

3/4 corn flour


Method :
  • Marinate fish with fish sauce & corn flour for 10 minutes. Place it on a greased serving dish.
  • Combine finely sliced ingredients & seasoning. Pour over fish & steam over rapidly boiling water for 5 minutes or until fish is cooked. Pierce a fork into the flesh. It should slode through easily.
  • Garnish with coriander leaves & sring onion & serve immediately.
